You can work curls and extensions all day and you won’t get the desired outcome without a proper shoulder program. Fully developed shoulders give the upper arm the V look at the top which helps with the separation of the biceps and triceps giving the definition so many desire. 

While most people who lift weights regularly have somewhat developed anterior (front) deltoids it’s the medial (middle) and posterior (rear) deltoids that tend to lag behind causing the look of weak unbalanced shoulders and by proxy undefined arms, your arms may get big but they’ll lack the desired look.
